Not all players want to harm cute animals.

Smelting sugar cane would turn it into leather/equivalent.

and some alternative to feathers and ink sacs. These ones I think shouldn't be craftable.

and also some alternative crafting for string, for players that don't want to kill not-the-cutest animals.

I know strings are available through chest loot, but it would be cool to have the same unlimited supply of string non-vegan players have.

Also, adding leather (and the other items I've mentioned) to chest loot would give vegans an alternative. Currently there's only one way.

Then lets make those animals less cute, fixed

A horrible idea connived by. At best, evil, at worst, ruins so many of the game. If it is like this and smelt from sugar cane, who knows what other items can be made in what ways.
